Chocolate Zucchini Muffins


This recipe makes 2 9x5 loaves or about 15 muffins:

3 eggs
2 cups of sugar
1 cup of vegetable oil (or you can use a 1/2 cup of apple sauce, and 1/2 cup of veg. oil)
1 teaspoon of vanilla
2 cups of grated Zucchini
2 oz. of Chocolate
2 cups of Flour
1 teaspoon of salt
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1 teaspoon if baking soda
3/4 cups of chocolate chips

Preheat oven to 350 and melt two 1oz. squares of unsweet chocolate squares (my experience is DO NOT melt chocolate in microwave -this is a short cut that will not work in this recipe). The best way is to use a double broiler steaming pot to melt the chocolate.

Combine 3 eggs, 2 cups white sugar, 1 cup vegetable oil, 1 teaspoon vanilla, 2 cups grated zucchini and melted chocolate.

Gradually Stir in 2 cups flour, 1 teaspoon salt, 1 teaspoon cinnamon, 1 teaspoon nutmeg, 1 teaspoon baking soda and 3/4 cup of chocolate chips.

Spoon muffin mix into muffin pans.

Muffins bake for 25-35 minutes; loaves bake for about 40-50 minutes. But these times seriously depend on your oven, so I would start checking with a toothpick after about 20 minutes.
