Penne with Spring Veggies


This is a very light fun meal that is great for the spring and summer time.

1 box of Penne
2 tbsp of olive oil
2 tsp. of minced garlic (1 clove)
1 small chopped white onion
1 cup of a thinly sliced yellow bell pepper
2 cups of diced zucchinni
2 cups of diced yellow squash
1 bunch of asparagus cut into about 1-inch pieces
2 cups of halved cherry tomatoes
Salt and Pepper to taste
2 tsp. of basil
1 cup of Mozzarella cheese

-Cook pasta according to box
-Heat olive oil in a large skillet, add garlic and saute until golden brown, then add onion, and saute until onions looks clear.
-Add bell pepper, squash, zucchini and asparagus and saute until all veggies are heated -but not fully done.
-Add tomatoes, salt, pepper and basil. Cook for an additional 5 minutes.

Serve veggies over a bed of penne, and sprinkle cheese on top.
